Enter the Matador. A figure of style, strength and bravery. Our cocktail this week doesn’t require any bravery but certainly encompasses the other qualities.

It’s a truly magnificent combination of fruity pineapple, sweet orange, sour lime and gold tequila. Tequila pairs perfectly with lime and pineapple so even if you think you don’t like tequila, this cocktail may still be one you will enjoy.

Ingredients

2 oz. Sauza Gold Tequila

½ oz. Bols Triple Sec

3 oz. pineapple juice

1 oz. fresh pressed lime juice

Lime twist for garnish

Method

Place ice in a sour glass and set it aside to chill. Fill a mixing glass with ice, then pour in all the ingredients. Shake vigorously. Discard the ice from the sour glass.

Strain shaken mixture into the now chilled glass. Twist lime peel over the drink and leave it resting on the rim.

Tips

Using fresh lime juice will give you the best tasting drink.

Use a channel knife to create the long twist. To get a tight curl, wrap the twist around the handle of a bar spoon or straw. This will help give the twist a tight spiral.

 

Paloma

Paloma

When the sun is bright and the air is hot, you need a drink that is going to satisfy your thirst. The Paloma is that drink. A very cool, refreshing cocktail that has smooth 100 per cent Pure Agave tequila, a blend of citrus juices of lime and grapefruit, topped with a splash of fizz.

Ingredients

2 oz. Hornitos Reposado Tequila

1/2 oz. fresh lime juice or half a lime

2 oz. grapefruit juice

Pinch of salt

Top with soda

Salt rim (optional)

Method

Moisten the rim of a glass with a slice of lime. Roll rim in a plate of salt, add ice and squeeze half a lime over the ice. Leave the lime shell in the drink and add a pinch of salt, the grapefruit juice and top with soda. Stir to mix all the ingredients well.

Tips

The traditional Paloma uses a grapefruit soda brand called Squirt. You can use a grapefruit soda as a substitute for the fresh grapefruit juice and soda.

It is not uncommon to find a restaurant in Mexico where they will have a bottle of tequila at your table, some glasses with ice, a bowl of salt, limes, and a bottle of Squirt Grapefruit soda to share among your friends.

I like rimming just half the glass rim with salt. That way, you or your guests have the option to drink with the salt or without.

If your only experience with tequila is in a shot glass with salt and a lime wedge, you’re missing out. Fresh agave tequila mixed with ripe strawberry and raspberry, balanced with a hint of lime, creates a refreshing drink. Even if you’re not a tequila fan, cocktails with tequila can change your mind.

Ingredients

1 oz. Sauza Silver Tequila

1/2 oz. Triple Sec Liqueur

1 ripe strawberry

1 raspberry

2 lime wedges

Lime wheel fruit flag garnish

Method

Cut a large strawberry in half and place in a glass along with a raspberry and lime wedges. Muddle until all ingredients have been pressed.

Add ice, pour in Sauza Tequila and Triple Sec. Shake to mix and strain into a glass with new ice.

Garnish with a fruit flag.

Tips

To make a fruit flag, cut a lime slice and place a cherry in the middle. Pin together with a cocktail pick.

When using fresh fruits it is important to make sure they are ripe and full of flavour. If you happen to buy fruit that isn’t juicy, you may need to add more to achieve the same flavour profile.

Time for a change. A new season, warmer days, brighter drinks. This has inspired me to share this cocktail with you today. The Tequila Smash is simple and fun to make. Our base is formed from fresh fruit flavours of ripe strawberries and citrus orange mixed with tequila, which is made with 100 per cent Agave and has a subtle hint of oak, forming a very smooth fruity cocktail. Re-awaken your senses to prepare for the warmer days ahead. Cheers!

Ingredients

2 oz. Hornitos Reposado Tequila

2 strawberries cut in half

1/2 an orange cut into wedges

7Up (optional)

Garnish with a strawberry and orange peel.

Method: In a shaker glass, place fresh fruit and use a muddle to press (smash) the juices out. Pour in Hornitos Reposado Tequila and add ice. Shake vigorously and pour into a glass. Place garnish and straw. Enjoy!

Tips: Tequila mixes beautifully with fresh fruits like these. You can use other fruit flavours instead of the orange and strawberry very easily. Try pineapple, ruby red grapefruit, or peach.

The option of adding 7Up is there if you would like to extend the flavours by adding more liquid as well as adding a little fizz.
